I'd like there to be a way where countries with no value (that are not relevant for my map) can have one color that is set in the settings and counties with any value (which are relevant to my map) will have the min and max colors like now.
That way I would not have to go and change all the colors for countries that are not relevant to color ###### just so that I can see the gradation from the countries with values.

Excellent suggestion! We'll put some though into it.
Meanwhile I suggest removing definition of those areas that are not relevant from data file altogether. That way they will be colored to to whatever you specify in <area><color_unlisted> setting.
